Vanilla Shortbread Crust

  • 1 cup unsalted butter, room temperature

  • ½ cup granulated sugar

  • ¼ cup powdered sugar

  • 1 large egg, room temperature

  • 1 ½ teaspoons vanilla extract

  • 2 ½ cups all-purpose flour

  • 1 tablespoon cornstarch

Chocolate Shortbread Crust

  • 1 cup unsalted butter, room temperature

  • ½ cup granulated sugar

  • ¼ cup powdered sugar

  • 1 large egg, room temperature

  • 1 ½ teaspoons vanilla extract

  • 2 cups all-purpose flour

  • ½ cup cocoa powder

  • 1 tablespoon cornstarch

Shortbread Crust Instructions

  1. Whisk together the flour (and cocoa powder, if making the chocolate version) with the cornstarch. Set aside.

  2. In a stand mixer fitted with a paddle attachment, cream the butter and sugars until light and fluffy, about 5 minutes.

  3. Add the egg and vanilla, mixing until fully combined.

  4. Scrape down the bowl and mix for another 30 seconds.

  5. Add the dry ingredients and mix just until the dough comes together; don’t overmix.

  6. Wrap the dough tightly in plastic wrap and refrigerate for at least 4 hours, or overnight.

  7. Once chilled, knead gently and roll out to ¼ inch thick.

  8. Cut circles to fit your tart molds (3" works beautifully) and press dough into the molds, leaving about ⅛ inch above the rim.

  9. Freeze before baking.

  10. Preheat oven to 350°F.

  11. For butter tart filling: par-bake 12–15 minutes.

  12. For ganache tarts: bake fully for 20–25 minutes, or until golden.

  13. Immediately after baking, press down the centers and sides so the shells aren’t puffy.

  14. Cool completely before filling.

Ganache Filling

  • 6 oz (¾ cup) chocolate of your choice

  • 45 g (3 tablespoons) unsalted butter

  • 60 mL (¼ cup) heavy cream

Instructions

  1. Warm the cream in a small saucepan over medium heat until it’s just about to boil; small bubbles around the edges are perfect.

  2. Remove from heat and add the chocolate and butter.

  3. Stir until melted and silky smooth.

  4. If you like, spread a teaspoon of peanut butter, Nutella, caramel, or your favourite filling into the base of each tart shell.

  5. Pour the ganache into each shell, filling just below the rim.

  6. Sprinkle with crushed nuts, candy pieces, flaky sea salt, or anything that suits the moment.

  7. Chill in the fridge until set, then remove about 30 minutes before serving.

Raspberry Ganache Option

  • 40 g raspberries (fresh or frozen)

  • 6 teaspoons raspberry jam

Instructions

  1. Crush the raspberries with a spoon and press through a sieve to remove seeds. Set the smooth coulis aside.

  2. Spoon 1 teaspoon of raspberry jam into each tart shell.

  3. Prepare the ganache as described above (white chocolate is amazing!) and pour into the shells.

  4. Add a small swirl of raspberry coulis into the center of each tart, then use a skewer to gently marble it through the chocolate.

  5. Chill until set and bring to room temperature before serving.
