Spinach Lasagna Roll Ups

Makes 8 servings (8 roll ups)

Ingredients

  • 8 lasagna noodles

  • 1 tablespoon olive oil

  • 2 large cloves garlic, minced

  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1 teaspoon salt

  • 1 (14-ounce) jar spaghetti sauce

  • ¼ cup grated Parmesan cheese, or to taste

Instructions

  1. Preheat the oven to 350°F.

  2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles until tender but still firm, about 8 minutes. Drain and lay noodles flat on a clean surface.

  3. Heat olive oil in a small skillet over medium heat. Add garlic and cook until fragrant, about 2 minutes.

  4. Transfer garlic to a large bowl. Add spinach, ricotta, mozzarella, and salt. Stir until well combined.

  5. Spread a heaping ¼ cup of the spinach mixture down the center of each noodle.

  6. Roll each noodle firmly around the filling and place seam-side down in a baking dish.

  7. Pour spaghetti sauce evenly over the roll ups. Cover with aluminum foil.
