Pumpkin Pie and Tarts

Store-bought tart and pie crusts are wonderfully convenient when you’re short on time, and they work perfectly for this pumpkin pie and tart recipe. But for those moments when you want something a little extra special, I’ve also included my favourite homemade crust recipe. It’s tender, flaky, and just as lovely with savoury fillings as it is with sweet autumn spices.

Pumpkin Pie Filling

Yield: 1 9" pie or a dozen tarts

Ingredients

  • 2 eggs

  • 2/3 cup packed brown sugar

  • 1 can (14 oz) pure pumpkin without spices

  • 3/4 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1/2 teaspoon nutmeg

  • 1/8 teaspoon cloves

  • 1/2 teaspoon salt

  • 1 1/2 cups evaporated milk

Instructions

  1. Lightly beat the eggs in a mixing bowl.

  2. Add all remaining ingredients and stir until well combined.

  3. Pour the filling into a prepared pie or tart crust.

  4. Bake on the bottom rack at 450°F for 10 minutes.

  5. Reduce the oven temperature to 350°F and bake for an additional 35 minutes, or until the center of the pie is set and firm.
